What is the difference between Champagne, Prosecco and Spumante?
Champagne is the most prestigious sparkling wine in the world and may only be produced in the eponymous region in northern France. The méthode traditionnelle - where the second fermentation takes place in the bottle - gives champagne its complex flavour and fine, persistent bubbles. At NEVINI we import champagnes from Maison Gosset, the oldest wine house in Champagne (1584), renowned for their rich, fruity style without malolactic fermentation.
Prosecco comes from the Veneto region in northern Italy and is made from the Glera grape using the Charmat method, where the second fermentation takes place in large pressure tanks. This results in a fresh, fruity and approachable character. Spumante is the Italian term for sparkling wine and includes, besides Prosecco, bubbles based on other grapes, such as the Bianchello-based Spumante from Guerrieri or the sweet, aromatic Moscato d'Asti from Piedmont.
When should you serve sparkling wine?
Sparkling wine is more versatile than often thought. Champagne naturally shines at festive moments, but is also an excellent companion to oysters, sushi and smoked fish. Prosecco is ideal as an aperitif or with light starters and salads. A lightly sparkling Moscato pairs perfectly with fruit desserts, pastries or as a refreshing afternoon drink. Serve champagne and prosecco well chilled at 4-8 °C for an optimal experience.

A Brut Champagne such as the Gosset Grande Réserve is sublime with seafood, foie gras or a mature piece of Parmigiano Reggiano. The Gosset Cuvée Zero Dosage, without added sugar, offers a pure, dry character that shines with raw fish and tartare. For a summer gathering, a Prosecco Rosé is a refreshing choice with smoked salmon or mozzarella. The fruity Guerrieri Ale, with its delicate sweetness, is a surprising match with almond pastry or a fresh fruit salad.
