Altesino Brunello di Montalcino 2020 is a classic Brunello made from 100% Sangiovese from Montalcino, Tuscany. The wine has a ruby-red color that tends toward garnet with age, combining ripe red fruit with the refined, earthy character for which Brunello is known.

Zenato Amarone della Valpolicella Classico 2020 is a rich Amarone from Sant'Ambrogio di Valpolicella, in the heart of Valpolicella Classica. It is made from carefully selected grapes that dry for three to four months after harvest according to the traditional appassimento method.

The blend consists of Corvina Veronese, Rondinella, Oseleta and Croatina. On the nose, marasca cherry, dried plum, fig, sweet tobacco, fine spices, balsamic, leather and cocoa come forward. On the palate it is warm, full and velvety, with present tannins, good freshness and a powerful yet balanced structure.

Zenato Amarone della Valpolicella Classico Riserva Sergio Zenato 2018 is the house's signature wine: an Amarone Riserva from the oldest vineyards of Sant'Ambrogio di Valpolicella, made only from the best selections. The wine carries the name of founder Sergio Zenato and is built for long aging.

The grapes are hand-selected, dried for about four months and then slowly fermented. The wine ages for around five years in large Slavonian oak barrels and then at least one year in bottle. The nose is broad and mature, with marasca cherry, dried plum, fig, tobacco, leather, sweet spices, licorice and subtle balsamic nuances.

Domaine Jean-Louis Chave L'Hermitage 2021 is a refined Hermitage made from 100% Syrah from the famous Hermitage hill in the Northern Rhône. The Chave family has been making wine here since 1481. This cuvée is a blend of several top sites (lieux-dits), with the granite Les Bessards as its backbone, complemented by L'Ermite, Le Méal, Péléat and Beaumes, among others.

The elegant 2021 vintage shows aromas of raspberry, red cherry, red plum and black cherry, interwoven with dried herbs, pencil shavings, violets and cedar. On the palate it is medium-bodied, precise and fresh, with fine tannins, clear tension and a long, lively finish.

Antinori Tignanello 2022 is the latest vintage of one of the very first Super Tuscans: the wine with which Marchesi Antinori changed the Tuscan wine world forever in the 1970s. The grapes — 78% Sangiovese, 18% Cabernet Sauvignon and 4% Cabernet Franc — come from the famous 77-hectare Tignanello vineyard, situated at 350-400 meters altitude in the heart of the Chianti Classico zone, on limestone-rich soils of alberese and marl.

In the glass, deep ruby red with purple reflections. The nose offers cherries, ripe black cherries and pomegranate, with delicate notes of violets, fresh balsamic hints and an elegant touch of vanilla. On the palate it is dense yet fresh, with supple, savory tannins and a long finish. The press was full of praise for 2022: Wine Advocate 97, James Suckling 96 and Falstaff 96 points.

Stag's Leap Wine Cellars CASK 23 Cabernet Sauvignon 2012 is a Cabernet Sauvignon from the Stags Leap District in Napa Valley, made from 100% estate-grown grapes from the S.L.V. and FAY vineyards. Both vineyards contribute equally to this vintage: S.L.V. brings structure, concentration and spicy intensity, while FAY adds perfume, ripe fruit and a supple mid-palate.

The nose opens with black cherry, dark plum, espresso and spice. The palate is rich and expansive, with concentrated dark fruit, dried blackcurrant, full yet refined tannins and a long finish of mocha and black tea.

Matrot Meursault Blanc 2023 is a classic white Burgundy made from 100% Chardonnay, blended from twelve parcels around Meursault. The vines average 35 years old and are hand-harvested; whole bunches are pneumatically pressed before 24-hour settling and fermentation with indigenous yeasts.

The wine combines ripe yellow fruit and fresh citrus with the characterful profile of Meursault: dry yet rounded. Butter, oak, vanilla, apple, pear and mineral notes add extra depth to the flavour profile.

The carefully harvested organic Glera grapes are transformed in the cellar into must, where primary fermentation takes place, followed by settling stages to clarify the wine that later becomes spumante (sparkling) with the foam formation stage.

When the Glera grapes have reached the perfect ripening point, they are harvested to preserve their acidic properties together with a superior flavorful freshness. After being destemmed and crushed, they are placed in a gentle press and the must is separated from the skins, cooled and clarified by flotation. Yeasts are added to the clear must to start the alcoholic fermentation at a controlled temperature of 16-18°C. The Pinot Nero base is combined with the Glera base and we can proceed to the second fermentation.
