Description
Zýmē Recioto della Valpolicella Classico Amandorlato 2011 'Al Mio Maestro' is an exceptional dessert wine, dedicated to Giuseppe 'Bepe' Quintarelli, winemaker Celestino Gaspari's father-in-law. This wine is a synthesis between traditional Recioto and Amarone - a Recioto with the lowest possible residual sugar content.
The blend consists of Corvina and Corvinone (60%), Rondinella (30%), Molinara (5%) and Croatina (5%). After the grapes were dried, the wine was vinified in cement tanks at natural temperature with wild yeasts, with minimal movement of the must. Fermentation stopped naturally due to sulfur, alcohol and residual sugar. The wine then aged for 20 months in Slavonian oak barrels (350-500L) and was bottled in May 2017.
