Description

Zýmē Cabernet 60/20/20 is an elegant Bordeaux-style blend from Veneto, consisting of 60% Cabernet Sauvignon, 20% Cabernet Franc and 20% Merlot. The grapes come from the Colli Berici, near Lonigo in the province of Vicenza.

The wine has a deep ruby red color tending towards deep purple, with garnet reflections when aging and a beautiful glycerine richness. On the nose, aromas of red forest fruit such as blueberries, black currants and wild blackberries, complemented by musk and spices.

On the palate it is enveloping complex, full and persistent, with an excellent balance. Flavors of plum jam and red forest fruit come forward, followed by good tannins with texture and hints of pepper, perennial herbs and clayey earth.

The wine ages for at least 24 months in new oak barrels, followed by 1 year of bottle aging. Aging potential of 10-15 years. Ideal with grilled or roasted meat, semi-aged to aged cheeses and pork. Serve at 16-18°C after 1 hour of decanting.
