Description
Daniel-Étienne Defaix Chablis Premier Cru Les Lys 2016 is a refined, long-aged Chablis made from 100% Chardonnay. The old vines grow on limestone- and marl-rich soils with a favourable southeast exposure. After fermentation, the wine receives an exceptional amount of time on its fine lees and in tank before release.
The nose opens with candied citrus, ripe apple and pear, followed by toasted nuts, beeswax, hay and dried fruit. The palate is delicate yet powerful, with a satiny texture, pronounced minerality, fresh acidity and a long, gently spicy finish.
