Description
Daniel-Étienne Defaix Chablis Premier Cru Vaillon 2015 is an exceptionally long-aged white Burgundy made from 100% Chardonnay. The old vines grow in a southeast-facing Premier Cru vineyard with limestone, marl and iron in the soil. Defaix gives the wine years of rest on its fine lees before release.
The nose offers citrus, mirabelle plum, green apple and fresh peach, followed by beeswax, white flowers and buttered brioche. The palate is rich and satiny, with lively acidity, chalky minerality and a broad, long finish.
